Chef Heather Carlucci, sat down with Joanne Camas of Epicurious.com to talk about our campaign and why it continues to be so important to her. Heather, mother of a young child, discusses why fracking is dangerous to water, farming, the local economy, and the environment we leave for next generations. “Restaurants and hotels can’t function without fresh water and good food. Neither can hospitals. Think about how many people are employed in those three employment examples. When you start thinking in work and health terms, the concept becomes bigger, and that’s our reality.” Since Heather helped found Chefs for the Marcellus we have grown to 250 campaign members and influenced Alice Waters and her colleagues to launch a chef’s petition to ban fracking in the state.
